The course
Tourism for gourmets and wine lovers, if well planned and managed, could become an important resource for local companies (especially those in the tourism and agro-food sectors) and for the sensory rediscovery of the production areas.
The course offers the theoretic and practical basis for planning, building up and offering hospitality in production areas through experiences of the locality.

Participants on the course will acquire knowledge and gain experience of real cases (both Italian and foreign) to enable them to:  

  • interact with wine and food lovers and their preferences;

  • identify and interpret the characteristics of an evolving market;

  • gain and share knowledge of territories and food products with professionalism;

  • plan, arrange and adapt a food company's services for tourists;

  • give a warm and personalized welcome to all arrivals;

  • arrange the technical side of itineraries, tourist packages and catalogues which safeguard the carrying capacity of the resources and which enhance the tourist's experiences;

  • put together a themed holiday for tourists who are looking for an unmistakable flavour: that of every single region aiming for quality.

Analysis and interpretation of production areas.
The demand: trends in tourism, defining a target.
Transforming the area into a tourism product.
The offer: Workers in the food sector. Making the company attractive to tourists: accessibility and welcome, places to visit, staff, routes, tasting sessions, purchasing, personalization of the service, evaluation of customer satisfaction.

The offer: Workers in the tourism sector and the search for flavour (hospitality, the restaurant business, information for tourists, tour operators.)
Planning the food and wine lovers' stay: the package, the catalogue and distribution notes, planning a tourist itinerary in production areas.
Communication and image: an invitation to discover the local flavours.

A visit to an oil production company: acquiring the main technical notions about olive oil and the production stages, from the olive grove to the finished product.


GENERAL INFORMATION

Who can enrol
ONAOO Associates, food companies, private and public tour operators, professionals in the hospitality sector, administrators, communicators and journalists, students, all those who are passionate about this area.

The instructors, Erica Croce and Giovanni Perri,
teach Tourism for Food and wine lovers at Pollenzo University, Faculty of Gastronomic Sciences, and have collaborated for years with the CISET of Ca' Foscari University in Venice. Founders of Meridies - Culture and tourism itineraries (www.meridies.net), they provide a consultancy service and carry out various types of projects: research, marketing, enhancing the value of the area, communication, editing, hospitality and training for public and private operators.

They have written guidebooks for tourists and other publications regarding local culture and territory. They also write for various magazines and teach several University post-graduate courses and other training courses.

Enrol immediately
 

Withdrawal times and methods
Reimbursement of the enrolment fee will be possible up until 15 days prior to the start date of the course. After this date no reimbursement will be possible and the entire sum will be payable. However, it is possible to substitute the participant or take part in a successive or different ONAOO course.

Programme variations
The ONAOO reserves the right to postpone or cancel courses; this will be communicated to participants by fax or email three working days prior to the start date of the course. In this case the only obligation on ONAOO is the reimbursement of payment received with no further sums due.
The ONAOO also reserves the right, if necessary, due to organizational problems, to modify the programme/venue of the course and/or substitute the named instructors with others of a similar professional level.

Competent tribunal
The Tribunal with exclusive competence for the interpretation and execution of the contract is that of Imperia.
